Eat your heart out

Since we were stupid and ate out a lot earlier this month, the last stretch of this month requires a lot more care. We're also planning to go see my grandparents next month, so money is tight right now. Mostly the red flags went up after Robert unexpectedly had to drop $200 to fix his car!

Before heading to the grocery store, I flipped through my "new" Vegan Mediterranean Cookbook for some ideas. A friend and me were at Mr. K's, a used bookstore yesterday, and I'm so glad I found this gem. Such a great book!

2 globe artichokes, 2 lemons, local (and organic!) vidalia onion, 2 russet potatoes, 8 oz container of button mushrooms, cabbage, a bunch of fresh spinach, frozen edamame, frozen peas, and raisins. Earth Fare also had coupons for free (non-organic) ravioli AND free (non-organic) mozzerella and basil with the purchase of 1 pound of local heirloom tomatoes.

Our total was $31.20. Not terrible. Especially considering I think this will last more than a week. I could be wrong. It has happened.. oh, I don't know... once or twice before.

I'm not really keen on planning, but it seems warranted this week to keep us on track. We don't eat dinner together except on Wednesdays, and most days we don't get to eat lunch together either, so the plan is to cook ahead and have leftovers for packing and re-heating.

Sauteed Zucchini and Mushrooms with Sun-Dried Tomatoes (p.159) on rice
Baked Cabbage with Garlic (p.142)
