Have to share: Made some beautiful enchiladas last night. They're a tad on the spicy side so Ryan was happy - I'm just happy they were so pretty. They have vegetarian re-fried beans, lime, red onions, quartered cherry tomatoes, colby/jack cheese, roasted red pepper enchilada sauce, and black olives. Nom, nom, nom... Happy there are left overs for dinner tonight too, they're always better the second day anyway. Marvel at my food porn! Hehehe.

ReplyDeleteHey Jaime, these are beautiful, which is actually quite a feat with something (like a casserole or enchiladas) that goes in the oven. Often, the heat will have its way with the food causing for beauty to fall to the way side. Looks delicious...!
